I'd be surprised to find a full-size laptop/notebook (i.e. not a glorified tablet) that didn't have more than one USB-C port if it used USB-C for power - these days it seems like the issue is more finding ones that have any USB-A ports

IMO, the bare minimum any laptop should have is 3 USB-A ports: one for a mouse, one for a keyboard, and one spare so you can plug in other devices (e.g. phones) without unplugging an input device.
